  1. Crock Pot Chicken Tacos

    2-3 boneless chicken breasts
    1 can black beans
    1 can corn
    1 pkg chicken taco seasoning
1/2 cup chicken broth (use more or less for how thick you want it)
    1 cup salsa

Place all ingredients in crock pot. High for 3-4 hours low for 6-8. Just before serving shred chicken and add:

    1 cup sour cream
    1/2 cup cheese

Serve on tortillas with additional toppings: more cheese, tomatoes, shredded lettuce, guacamole, whatever..

I think I made this recipe for you when you were out this fall. I serve it with a Mexican rice. I can get you that recipe if you want it.

  2. Just read over my post. It is high for 3-4 hours OR low for 6-8. You probably knew that, but just wanted to make sure.

  4. This recipe can be done in the crock pot or put together in like a 1/2 hour when you get home. It is super easy, another dump everything in recipe.

    White Chicken Chili

2-3 cooked and shredded chicken breasts
    1 tsp minced onion
    1 1/2 tsp garlic powder
    2 cans great northern beans
    1 cup chicken broth
1 can cream of chicken soup
1 cup or water, or more/less for desired thickness
    1 can chopped green chilis
1 can mexicorn (Green giant brand)
    1 tsp ground cumin
    1 tsp dried oregano
    1/2 tsp black pepper

I just cook my chicken breasts in the same pot I am making the soup in, shred them, then dump all the other ingredients in. Cook like 10 minutes until it gets hot. Then just before serving add:

    1/2 cup whipping cream
    1 cup sour cream

Top with cheese. I also serve with tortillas. You can rip them apart and dip. Or I make baked tortilla chips in the oven. I just cut the tortillas in triangles, put on baking sheet, and put in the oven at 350 until crisp. It takes about 15 minutes.

You can do this in the crock pot, you just have to cook the chicken before hand and then dump all the ingredients in (except sour cream and whipping cream) and let cook on low all day.

  5. Thank you so much Mandy! You did make the chicken tacos when I was there and they were delicious! I'm going to get the ingredients next time I'm at the store.

I found a recipe last night online and made it today. It was delicious. I'll share it.

1/2 red onion cut in large chunks
    6 potatoes sliced thinly
    1 T olive oil
    salt pepper to taste

put those at the bottom of the crockpot

then 4-6 thinly sliced pork chops

pour over that a can of cream of chicken soup and 3/4 cup alfredo sauce (I used Ragu alfredo)

cook on low for 6-8 hours.

This really was so fast and so delicious.
